Additionally, it is studied for its role in interfering with iodine uptake in the thyroid gland, contributing to research on dietary causes of goiter. Found in certain oilseeds, progoitrin levels are monitored during food processing to minimize antinutritional effects in humans and livestock. Upon hydrolysis by myrosinase enzyme, progoitrin converts to goitrin, the active goitrogenic metabolite.
